5 fast facts with the Capital City Cook-Off’s expert barbecue judges

Food is integral to the human condition, and if you ask someone in the South, barbecue’s a huge part of that equation. The Capital City Cook-off is happening soon, and if you’re looking to taste the best around, then look no further. We talked to a couple of the event’s barbecue judges to get a better idea of what makes good barbecue. Plus – they taught us a little bit about what goes into judging this popular food.

The Bama-Q Barbecue Cook-off is taking over the Union Station Train Shed on February 22; the event will continue into February, 23, a Saturday. Thousands will flock to downtown Montgomery to try out the best barbecue across the South. Judges from the highfalutin Kansas City Barbecue Society (KCBS) will be there to judge each and every plate put in front of them.

Those plates will include brisket, chicken, pulled pork, and more. Even if you aren’t there for the judging, you should absolutely show up for all the great food. The event begins at 10:00 a.m. on Friday and persists into Saturday, when most of the festivities take place; Friday is just the appetizer!
